The Olive Oil Source has a wealth of information about olives and olive oil. It has one of the best guides to making infused or flavored olive oil. Two of which can be made fairly readily at home and two which are more industry oriented. Below are a couple of close up snaps from the Florence Food Market, in June 2005, of some infused and flavored oils. And if you want recipe ideas Michael Chiarello's book listed among the Amazon collection on the left is a good place to start. It also has reference to making infused oils but the Olive Oil Source is better in that respect. In France, which is blog central for the olive blog, the main use of infused oil has been pouring on pizza but the range on the shelves is starting to expand.
