But I have a question - how did Tunisia manage to 'boost production' in response to demand? What's the trick?

CB, Its a couple of years since the olive blog ventured to Tunisia. We can only assume it is either shifting production from table olives to oil, bringing more acerage/hectares into production, greater international direct marketing (perhaps reducing indirect sales via Italy) etc. tob
